I don't know when I fell in love with apricots, but I think they're seriously underappreciated and make some of the best desserts. If you agree, hit reply and type "me too."

If you've never cooked or baked with apricots, then give one or two of these recipes a try.

  • ​Small Batch Apricot Jam: No pectin, no canning. I love apricot jam, and this version with a little vanilla extract is delicious. You know that little zing at the back of your jaw when something is perfectly tart? Yeah, this jam has it!
  • ​Fresh Apricot Cake: This super moist cake is made with fresh apricots on top and apricot puree in the batter. It's amazing.
  • ​Apricot Tart: This easy tart features my press-in cookie crust, a creamy vanilla custard, and loads of fresh apricots.
  • ​Apricot and Almond Galette: This galette is a tasty combination of almond cream and fresh apricots. If you've never had the combination of apricot and almond, then give this a try.
  • ​Apricot Curd: I love making fruit curds, and this is one of my favorites. It's creamy, tart, and sweet. Combine it with whipped cream for an easy dessert, or use it as a spread for toast and pancakes
